It's all explained in the notice of competition. Read carefully the first pages. EPSO/AD/345-1 stand for option 1 and EPSO/AD/345-2 means option 2.
Option 1: you must choose among English, German and French 2 languages FROM which you will translate into your target language (Italian in your case, as I see from the number of competition)
Option 2: choose 1 language among English, German and French and another one among the 24 official languages of the EU from with to translate into target language.

mmh... and what to choose? I'd like to choose the 'Option 2', because I think other languages can be a 'plus'. However, with 'Option 2'... less chance.
